When Andrew heads to central Florida, he meets some true, proud Florida "crackers" -- descendents of the states early white settlers, who are still living off the land and eating many of the same foods their ancestors ate. With them, Andrew discovers the "other" side of the state -- the part that's not theme parks and beaches. They take Andrew on a hunt for an armadillo, which they smoke with peppers and onions tucked into the shell for an authentic, central Florida meal.
